Roasted Potatoes and Red Peppers
Ingredients
| 1/2 cup | chopped Sunfresh Farms red pepper |
| 2 lbs | diced Sunfresh Farms yellow potatoes |
| 1 tbsp | olive oil |
| 1 1/4 tsp | salt |
| 3/4 tsp | paprika |
| 1/2 tsp | minced garlic |
| 1/8 to 1/4 tsp | cayenne pepper |
| 1/4 tsp | thyme |
Directions
Combine potatoes and olive oil in a baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450° for about 35 minutes, stir every 15 minutes. A great side dish to chicken!
